Rice Crispy Treats

I love making these delicious treats for my family and friends. They are a twist on Chocolate Crackels as they are slices and have white chocolate chips mixed through them. As normal chocolate crackels can be a bit of a chocolate overload the white chocolate chips even this out. A great treat for party snacks or just to nibble on when you are hungry.
Recipie
Ingredients
4 cups of rice bubbles
1 cup of icing sugar
1 cup of desiccated coconut
250 grams of butter
3 tablespoons of cocoa
1 1/2 cups of white chocolate chips
Method
1. In a large bowl, mix rice bubbles, icing sugar, coconut and cocoa.
2. slowly melt the butter in a small saucepan over a low heat. Allow to cool slightly. Add to the dry mixture, stirring until combined.
3. Add 1 cup of the white chocolate chips and mix until combined.
4. Line a lamington tray with baking paper. Pour the mixture into the tray and refrigerate for about an hour.
5. Melt the rest of the white chocolate in a glass bowl over a saucepan on a low heat with boiling water in it.
6. Once the chocolate chips have fully melted, pour it into a zip lock bag and snip off the end. Draw diagonal lines across the rice crispy treats to decorate.
